Chardonnay from 33 year old vines on limestone scree above the Loue, pressed directly and aged ten months in old barrels, no added sulphur. Taut, salty and mineral, tastes good with oysters.

Fun fact: un pagure is a hermit crab, and that is what Hugo named his estate after.

Taste: lemon peel, crushed stone and sea salt, lean and taut.

Food: gravlax with dill and mustard sauce, or smoked trout.
