Alberto Buratti - Azienda Agricola Fasolo Paolo
Named after its founder and Alberto’s grandfather, the winery was established in 1972. The farm spans 4.5 hectares, including 3 hectares of vineyards and the rest dedicated to olive trees and woods. Located on the north side of the Colli Euganei Natural Park at altitudes between 150 and 200 meters, the vineyard soil is a thin layer over a substrate of white and red marls and white clay, known as Biancone and Scaranto rosso. The vineyards, aged between 15 and nearly 100 years old, have been treated naturally since 2019, using minimal copper and sulfur, and naturally fermented compounds. The winemaking process is entirely natural, with no additives, temperature control, pumps, yeast, sulfites, or filtrations.
